He did not state oven temperatures — only ~40 minutes with top and bottom heat for the chops (or a slow-cooker stick as an alternative), then a second bake to melt the cheese. Suggested temps added for cooking: 120°C / 250°F for the 40-minute slow bake of the seared chops (keeps lean pork juicy; typical low-oven finish after a hard sear), and 200°C / 400°F for the cheese finish (the usual Hong Kong café range is 180–220°C).
