Sweet Potato Toast with Cottage Cheese, Avocado & Fried Eggs
taytay_xx on Instagram ↗Some amounts estimated
A sweet potato is microwaved briefly to soften, cut lengthwise into thick slabs, then toasted until the edges crisp, so it can carry toppings the way bread does. Cool cottage cheese, soft avocado and runny-yolked fried eggs sit on top, with hot honey and sea salt for sweet, salty heat. It's a quick breakfast or lunch for one. Only the eggs had an amount, so the other toppings are our estimates for a single serving.
Ingredients
- 1 sweet potato
- ~2 tsp extra virgin olive oil
- ~4 tbsp cottage cheese
- ~1/2 avocado
- 2 eggs
- ~1 tsp hot honey
- ~1 pinch sea salt
~ Nourishible estimate; the source did not state this amount.
Equipment
- Microwave and a paper towel
- Sharp, sturdy knife
- Toaster oven, or an oven and baking tray
- Non-stick frying pan
- Fish slice or spatula
Steps
If it goes wrong
If it's still rock hard and fights the knife, give it another 30 seconds. If it has gone mushy, it will slice badly: let it cool completely and cut thicker slabs.
If it goes wrong
Slabs thinner than 5 mm can scorch before the middle is tender, and ones thicker than 1.5 cm need extra minutes in step 3.
If it goes wrong
If the edges darken before the middle softens, drop the heat to 180°C / 350°F and add a few minutes. If they are still pale and bendy, they need longer, not a hotter oven.
If it goes wrong
If the avocado is too soft to slice cleanly, chill it for 15 minutes first, or mash it with a fork and spread it on instead.
If it goes wrong
If the whites are still glassy near the yolk, put a lid on the pan for 30 seconds. If the edges turn brown and lacy before the whites set, the pan is too hot.
Notes from Nourishible editors
Written by our recipe team from the video and the method above.
- Technique · Step 1: The wet paper towel steams the potato as it microwaves, which is what softens it enough to slice cleanly.
- Technique · Step 2: Cut the slabs an even thickness so they crisp and cook through at the same pace.
- Our take · Step 7: Cottage cheese, sweet potato and hot honey already pull sweet and salty — taste before adding the pinch of sea salt.
- Swap · Step 7: No hot honey? Plain honey with a pinch of chilli flakes fills the same sweet-heat role.

Variations
Dairy-free. Replace the cottage cheese with 3 tbsp hummus or mashed white beans, spread the same way. Skip the extra salt until you've tasted it.
Poached eggs. Poach the eggs for about 3 minutes in barely simmering water instead of frying, drain on a paper towel and place on top. The eggs then need no oil.
Smoked salmon. Skip the eggs and the second teaspoon of oil. Lay folded slices of smoked salmon over the cottage cheese and avocado, and go lightly on the salt.
Storing and reheating
Best eaten straight away: the slabs soften, the avocado browns and the yolks set as it sits. Toasted slabs on their own keep in a covered box in the fridge for up to 2 days; re-crisp them in a 200°C / 400°F oven until steaming hot all the way through. Add the toppings fresh each time, because assembled toast doesn't store well.
How we adapted this recipe
The sweet potato, the microwave time, the 10-minute toast, the two fried eggs and the order of toppings come from the creator.
The creator gives no amounts for the olive oil, cottage cheese, avocado, hot honey or sea salt, so those are our estimates for one serving, marked ~. The slice thickness, oven temperature and doneness cues are our additions. The listed 15 minutes leaves no room for oven heating and a 10-minute toast, so we set the total to about 25 minutes.

Questions about this recipe
Can I make this without a microwave?
Yes. Slice the raw sweet potato with a sharp knife into slabs about 1 cm thick, trimming one side flat so it sits steady on the board, then toast for roughly 10 minutes longer, until a knife goes in easily.
Why are my slabs soggy rather than crisp?
The damp paper towel leaves moisture on the surface, so pat the slabs dry before toasting. Crowding them on the tray also traps steam, so leave a gap between each one.
Do I need to peel the sweet potato?
No. Scrub it well and leave the skin on; it crisps in the toaster and helps the slabs hold together when you lift them.
How do I make two servings?
Microwave two potatoes one after the other, or add 30–60 seconds and check, and toast all the slabs in a single layer. Double the toppings and fry the eggs two at a time.
