Soy sauce is a salty, savoury seasoning made from fermented soybeans, used from Cantonese beef and steamed ribs to Korean braised tofu, ramen eggs and a tofu and wakame salad. Light soy seasons; dark soy adds colour and a molasses depth. Where a recipe just says soy sauce, use light or all-purpose, and taste before adding more salt.
