Sicilian Roasted Potatoes

• 2.6 lb potatoes
• 3 tbsp unsweetened yogurt
• 1 tbsp ketchup
• 5 tbsp olive oil
• 1 tsp chilli flakes
• 1 tsp dried Italian herbs
• 1/2 tsp curry powder
• 2 clove garlic
• salt the potatoes
• fresh parsley, chopped, to taste

Steps

1. 1.Peel the potatoes and cut them into large, thick rounds — a wavy/crinkle cutter gives the ridged edges shown in the video.▶0:09
2. 2.Place the sliced potatoes in a deep bowl.▶0:44
3. 3.In a separate bowl, combine the yogurt, ketchup, olive oil, chilli flakes, Italian herbs, curry powder and crushed garlic.▶1:15
4. 4.Mix the marinade well until smooth.▶2:16
5. 5.Pour the marinade over the potatoes and toss until every piece is covered with sauce.▶3:26
6. 6.Spread the potatoes on a lined baking sheet in a single layer.▶3:39

8. 8.Roast at 200C (392F) for about 40 minutes, until golden brown.▶4:25
