The whole point of the recipe is step 5: after the long simmer you pull the solids out and dry-fry them in the empty pot with no oil, then pour the broth back — that is what emulsifies the broth into the milky, thick "奶白" state rather than a clear soup. The creator notes it is fiddly but makes a large difference. The chicken is simmered with the skin on, which is what gives the aroma but also leaves a lot of fat floating on top — skim it before drinking. Fish maw is rehydrated by the fast method: soak overnight, boil 2 minutes with ginger and rice wine the next morning, then leave covered to steep for half an afternoon. The creator finds this quicker than steaming with no real difference in result. Translation note: the English translation carried in the post renders 圓肉 as "lotus seeds", but 圓肉 is dried longan — the video's own on-screen English caption at 0:27 says "dried longan", which is correct.
