Manchego & Prosciutto Croquettes with Thick Béchamel

Makes about 14-15 croquettes at ~45 g each — the video doesn't give a "serves N", so plan on 1-2 croquettes per person as a starter. The Manchego quantity isn't given as an exact measurement: the creator's rule of thumb is that total flavouring (cheese + ham combined) should be roughly a third to half the weight of the béchamel base — start with less and taste as you go.
