Cumin is an earthy, slightly smoky seed, sold whole or ground. It is the backbone of Easy Shakshuka and Spicy Sausage and Chickpea Stew, and it seasons Instant Chicken Curry, One-Pan Golden Butter Chicken and a Chickpea and Eggplant Hummus. Toast whole seeds in a dry pan until fragrant, then grind them, or bloom ground cumin in oil.
