Clear or milky chicken soup: choose the method
Last updated October 25, 2026

Two bowls of milky chicken soup can look like close relatives and keep very different hours. One starts with prepared stock and ends as dinner; another needs a long simmer and a turn at the wok. Clear stock can be a slow project too. Pick the job that fits tonight: making the broth, or putting noodles on the table.
What makes these three methods different?
| Method | What the recipe does | What still needs doing for dinner |
|---|---|---|
| Judy Leung's chicken stock at The Woks of Life, an external recipe | After bringing chicken and water to the boil, turns the heat down for a covered 4–6-hour simmer | Strain the stock, then choose and cook the rest of the meal |
| betiskitchenx's milky broth with fish maw | Credits the milky result to dry-frying the cooked solids and returning hot broth; no milk appears in its ingredient list | Plan advance fish-maw preparation and a long simmer before the dry-fry stage; this makes broth rather than the noodle dinner below |
| kiuu922's chicken noodles | Adds evaporated milk | A complete dinner using prepared stock |
The stock and broth recipes ask you to start further back in the cooking process. Choosing one for tonight means allowing for both that project and whatever you intend to serve with it. The noodle version starts with a prepared ingredient instead: the work of making that stock is already done.
A creamy chicken noodle dinner for two
From kiuu922's recipe, for two: 260 g fresh Shanghai noodles, 200 g diced chicken thigh, 250 g chopped baby bok choy, 3–5 dried scallops, 500 ml soaking water, 500 ml chicken stock, 150 ml evaporated milk. Marinade: ½ teaspoon salt and ground pepper to taste.
- Soften the scallops in the hot soaking water, retaining it.
- Boil scallops, soaking water and stock; cover and simmer gently for 15 minutes.
- Meanwhile, marinate the chicken for 15 minutes. Blanch noodles separately for 2 minutes, rinse and set aside.
- Add chicken and cook through, then bok choy for about 6 minutes until tender. Add noodles for 3 minutes.
- Stir in the milk; simmer gently until noodles soften and soup thickens. Divide the full batch between two bowls.
Check the thickest chicken piece with a thermometer cleaned and disinfected before and after use. Hong Kong's Centre for Food Safety specifies a core temperature of at least 75°C for 30 seconds.
Start with the task that cannot overlap
Allow for soaking, chicken cooking and the final simmer beyond the timed stages. Their durations are unspecified, so the creator's 30-minute headline is not a guarantee. For noodle substitutions, use the separate adaptation guide.
This comparison and order of work come from published methods, rather than a Nourishible cooking test. Choose the prepared-stock dinner when that is the job you want to finish; set aside a separate session when the broth itself is the project.
