Coix seed is traditionally classed as sweet, bland and cool, associated with the Spleen, Stomach and Lung. It is often chosen when a cook wants a light, slightly cooling grain in a broth.
Pressure-cook or simmer for a long time until the outer hull softens — it stays slightly chewy at the centre. Common in congee and barley-style soups.
